Lemon Vinaigrette

Today I am on a mission to start making my own salad dressing again. Being a mom, and a working mom at that, it’s hard sometimes to take the time to make them. But really… lets be honest… it’s just an excuse. This Lemon Vinaigrette took me literally 3 minutes to make. I probably spent more time taking photos of it then I did making it.

Yes, dressing is easy to buy in the store and if you look at the label you can get something “lite” or “sugar free”. But most of the time you have all the ingredients at home and then you know EXACTLY what is going into your dressing and you can alter the taste of it. Believe me it is the way to go, knowledge is better than ease.

The best thing about this Lemon Vinaigrette is it can be used as a marinade for veggies or chicken if you like, and I know you will like. Enjoy!

Lemon Vinaigrette
(makes 1 cup)

  • 1/4 cup fresh lemon juice
  • 1/2 olive oil
  • 1/4 tsp red pepper flakes
  • 1 tsp. of basil
  • 1 garlic clove, minced
  • 1/4 tsp salt
  • dash of pepper

Directions: Add all ingredients to medium sized bowl and whisk together until completely combined.
